Gray handles is a texture pack made so the diamond and netherite pvp tools (including mace) have their handles in a scale from white to black. If you need another versions, go over to https://convertmcpack.net/index.php and select 1.21.11 and then select the pack's version (1.21.11) and then select the version you want the pack to be in.
